Pandan chiffon cake

Friday, August 03, 2007

My mum used to bake chiffon cake when I was little.
I remembered that she used to bake with a tube pan.
The tube in the center of the pan lets the hot air circulate
so the heat can reach the center of the cake.
We had to invert the cake immediately to keeps the cake
from shrinking. But I like to use round pan cuz it's look more presentable.

Did u invert the cake after removing from oven?
Did u line ur cake pan?

Cos I am curious cos if u line ur pan when u invert it, didn't it fall down? And if u didn't invert it, didn't the cake shrink?

If you use the correct method to beat and folding the egg whites in the batter, the cake won't sink.If you mess up the beating and folding,no matter you invert the cake or not it will sink eventually. No,I did invert the cake right after removing from the oven but if i use the tubepan,I will invert a sponge the cake.:)If you want to take the cake out from the pan make sure it is completely cool and tab every side of the pan.Never use non stick baking pan.!!
