Basic Chocolate Butter Cookies

Light,crispy,flaky-the feeling is unforgettable.who can resist the temptation of Chocolate cookies?A chocolate chip cookie is a type of cookie that kids love.There is a great deal of variation between chocolate chip cookies.Since I ran out of Chocolate chips in my kitchen,so today I bake a simple Chocolate cookies for the kids with just adding the cocoa powder,butter,flour and icing sugar.It's simple yet delicious.!Recipe

1 1/4 cup cup Icing sugar
3/4 cup Butter, softened
1 egg
1 tsp Vanilla extract
2 cups all-purpose flour
1/4 cup Cocoa powder
1/2 tsp salt

1)Combine sugar and butter in large bowl.Beat at medium speed until creamy.
2)Add egg and vanilla extract and continue beating until well mixed.
3)Reduce speed to low,gradually adding flour,cocoa powder and salt(sifted)and scraping bowl and beat until well mixed.
4)Wrap each the cookie dough in plastic food wrap and refrigerate until firm for at least 2 hours.
5)Heat oven to 360°F.Shape dough one-third at a time(keep remaining dough refrigerated), into 1-inch balls.
6)Form balls into desired shapes .Place 1 inch apart onto ungreased cookie sheets.
7)Bake for 7 to 9 minutes or until set.Cool completely. Decorate as desired.

Basic Sponge Cake

I had tried baking sponge cake with different type of recipes about two years now and I finally found this recipe is the best.I used my Baking course step by step method to make it.I've never fail baking it using this recipe.

The cake won't sink at all .When baking cakes, it is important to remember that the ingredients should be measured very carefully- too much or too little of ingredients such as the egg,flour, oil, and sugar, can ruin the cake and its texture.Always follow the proper instructions in the recipe.The egg yolks are beaten with the sugar first while the whites are beaten separately, to be mixed in later. The mixture is then poured into the cake tin and baked. As can be seen, both methods take great care to incorporate air in the beating, whisking and sieving stages. This makes a very light product, but if you over beat the egg whites or not stiff enough,the cake will sink .

Recipe
Ingredients

5 Eggs(Large)
70 gm Castor Sugar
80 gm Cake flour
40ml Canola Oil/Vegetable Oil
30ml Milk/water

Method
(1)Beat the eggs and sugar till light and fluffy(Double in volume)About15minutes or more
(Make sure the mixture is in white colour and stiff peak)
(2)Slowly mix the flour into the mixture using the spatula.
(3)Gradually add in oil and mix well.
(4)Bake for 35-40 minutes at 360'F.

Notes:Another method of beating the eggs is place the bowl in a smaller saucepan containing hot water,over low heat.Beat the mixture continuously as it warms.
Once the mixture started get warm and double in volume,remove from heat and beat at high speed for about 15 minutes or until the mixture cools and is very fluffy and stiff.The mixture will be triple in volume and have the consistency of whipped cream.This method is much more faster to get the volume.

Pineapple cookies

This pineapple cookies really melt in the mouth.
Although it is expensive to buy an pineapple here
Using can crush pineapple works too.


Recipe
Pastry(Rub in method)
INGREDIENTS
250g Butter
1 Egg yolks
75g Icing sugar
1 1/2tsp Salt
310g Flour
1 1/2tsp Vanilla essence
1 tbsp Cornflour
2 tsp Custard powder(mix in 1 tbsp milk)
1 Egg yolk(egg wash)

I used this cloth strainer for squeezing out the pineapple crush juice.Fast job.

Filling
3 cans Crush pineapple(drained)540ml each can
300g Sugar
1 Cinnamon stick
Pinch of salt

Drained all the crush till dry,blend it if neccesary.
Pour it into a nonstick pan.
Add in the remaining ingredients and cook till
the paste thickens and dry enough to make a ball shape.
Put it into fridge for cooling.

Method
(1)Combine all ingredients(except egg)then rub it until bread crumb.
(2)Then, add in egg yolks.
(3)Well mix all together into a dough.
(4)Cover it and put needs to be refrigerated for half and hour.
(5)Roll the dough between two plastic wraps into thin dough.
(6)Then cut it with a small round cutters and fill the pineapple
paste to make a desired ball shape.
(7)Brush it with egg yolk,then bake at 180'c for 12-15mins or till golden brown.

My Favourite Butter cake

I am not a baker or pastry chef .Baking is my favourite past time and I carries with my experience to share with people all throughout the world.I am interested in baking since I was young.I then took some baking courses and learn the basic of baking(Important for a beginner)and get alot of useful tips from baker's friend.Now shall we begin with our exploration of baking!
Today, I baked this a simple Butter cake.It's been quite a long time I did not bake a Butter cake.
The first Butter cake,I had learned was in secondary school where my best friend taught me to bake my very first cake.She taught me to use spoon for measuring at that time.It work!
Since then I always use spoon for measuring the cake ingredients but after I took the baking courses,I had change my bad habit.
I found that the proper measurement is an important rule in baking.Now I realized that the an accurate measurement is the key to success.

Recipe
Ingredients (8 Inch cake ring)

A)
125g Butter
110g Castor sugar

B)
3 Eggs (large)

C)
140g Flour(sifted)
1/2tsp Baking powder

D)
20ml Milk

E)
1 1/2tsp Vanilla essence

Method

(1)Beat ingredient (A) until light and fluffy.About 3-5 minutes.
(2)Add eggs gradually until well mix.
(3)Then,slowly add in ingredients (C) and mix well combined.
(4)Finally,add ingredients(D)(E)and mix well.
(5)Transfer to mould size 8 " and bake at 350'Ffor 25-30minutes.
